Mate is not a drink you order. It is a drink someone hands you. At home the gourd goes around the table in one direction, filled by the same person every time, and the only rule is that you do not say thank you until you have had enough.
In the café we serve it the way we drink it: a gourd, a bombilla, a thermos of water just under the boil. Ask at the counter and we will fill it for you as many times as you like. If you come with friends, we bring one gourd. That is the point.
